1. Operations Management
- Oversee day-to-day commissary operations including food production, packaging, storage, and dispatch.
- Implement standard operating procedures (SOPs) for production and commissary processes.
- Ensure smooth coordination between procurement, production, logistics, and distribution.
2. Production & Quality Control
- Plan and schedule production to meet demand and company targets.
- Monitor product quality, consistency, and compliance with company standards.
- Enforce Good Manufacturing Practices (GMP), Hazard Analysis and Critical Control Points (HACCP), and other food safety standards.
3. Inventory & Cost Control
- Manage inventory of raw materials, packaging, and finished goods.
- Ensure proper storage, handling, and rotation of stocks (FIFO/FEFO).
- Monitor wastage and implement cost-saving initiatives without compromising quality.
4. Manpower Management
- Supervise commissary staff, assign tasks, and monitor performance.
- Conduct regular training to improve skills, efficiency, and compliance with food safety.
- Maintain discipline and promote a safe and productive work environment.
5. Reporting & Compliance
- Prepare daily, weekly, and monthly reports on production, inventory, and manpower.
- Ensure compliance with company policies, government regulations, and health & safety standards.
- Recommend improvements in processes, equipment, and workflow.
