The Meat Cutter is responsible for accurately cutting, trimming, portioning, and preparing various types of meat based on production needs for restaurant and catering operations. This role requires adherence to safety and sanitation protocols, proper handling of tools, and consistent output quality.
Key Responsibilities:
1. Meat Preparation and Cutting
- Cut, trim, and portion pork, beef, and chicken as per customer specifications
- Prepare special cuts required by the kitchen
- Ensure consistent sizing and accurate weight for batching and packaging
2. Safety and Sanitation
- Operate knives and saws, safely following equipment guidelines
- Maintain cleanliness of meat cutting tables, tools, machines, and cold storage areas
- Follow HACCP, GMP, and food safety standards at all times
3. Inventory Handling
- Label, date, and store cut meats according to FIFO procedures
- Report any spoilage, abnormalities, or stock issues
4. Coordination and Reporting
- Coordinate daily cut lists
- Record output per type and quantity
- Support weekly inventory count and cleaning schedules
Qualifications:
- At least 1–2 years experience as a butcher or meat cutter
- TESDA NCII in Slaughtering or related field is a plus
- Physically fit and able to handle cold environment and heavy lifting
- Knowledge of meat types, cuts, and safe knife handling techniques]
- Knowledge in operating and handling meat cutter machine (bone saw)
- Attention to detail and commitment to hygiene
Compensation:
