Position Summary:
The Head Chef will oversee all kitchen operations in a Japanese restaurant, ensuring the delivery of authentic, high-quality dishes while maintaining efficiency, safety, and cleanliness. This role requires expertise in Japanese culinary traditions, exceptional leadership skills, and the ability to train and inspire the kitchen team.
Key Responsibilities:
- Ensure menu items meet both traditional taste standards and modern customer preferences.
- Supervise and participate in the preparation, cooking, and plating of all menu items.
- Maintain strict portion control and presentation standards.
- Monitor quality and freshness of ingredients, ensuring proper storage.
- Recruit, train, and mentor kitchen staff in Japanese cooking techniques.
- Create schedules, delegate tasks, and monitor team performance.
- Foster a culture of discipline, teamwork, and continuous improvement.
- Manage kitchen inventory
- Control food costs, minimize waste, and track kitchen expenses.
- Maintain accurate stock records and place orders in a timely manner.
- Enforce strict food safety and hygiene standards according to local health regulations.
- Ensure kitchen equipment is maintained, clean, and in safe working order.
- Conduct regular inspections to ensure compliance with sanitation guidelines.
- Work closely with the front-of-house team to ensure customer satisfaction.
- Address special dietary requests and resolve customer concerns related to food quality.
Qualifications & Skills:
- Proven experience as Head Chef or Senior Chef specializing in Japanese cuisine.
- Strong knowledge of Japanese culinary traditions, knife skills, and food presentation.
- Leadership and team management experience.
- Excellent time management and organizational skills.
- Ability to work under pressure and maintain high standards.
- Knowledge of food safety, hygiene, and kitchen operations.
- Flexibility to work evenings, weekends, and holidays.
Preferred Experience:
- Formal culinary training, preferably with specialization in Japanese cuisine.
- Experience working in a high-volume Japanese restaurant.
- Knowledge of Japanese culture, dining etiquette, and traditional cooking equipment.
