Role Overview
The Outlet Manager is responsible for the overall operation and performance of Mamma Mia Ristorante Italiano and La Fiesta, ensuring the delivery of exceptional dining experiences while maintaining operational efficiency and profitability. This role includes leadership of the service team, coordination with the culinary team, adherence to brand standards, and driving guest satisfaction in alignment with Mandarin Bay Resort & Spa’s commitment to excellence.
Key Responsibilities
1. Operational Leadership
a. Oversee daily operations of Mamma Mia Ristorante Italiano and La Fiesta, ensuring seamless service delivery and adherence to operational standards.
b. Coordinate with the culinary team to maintain consistency in food quality, presentation, and timely service.
c. Monitor outlet ambiance, cleanliness, and overall readiness to deliver an exceptional guest experience.
2. Guest Experience
a. Ensure prompt resolution of guest concerns and consistently aim for high satisfaction scores.
b. Develop and implement service standards tailored to each outlet’s unique theme and offerings.
c. Actively engage with guests to gather feedback and foster guest loyalty.
3. Team Management
a. Lead, train, and motivate the service team to uphold Mandarin Bay's hospitality standards.
b. Conduct performance evaluations, address training needs, and implement development plans.
c. Oversee team scheduling and ensure adequate staffing during peak hours and special events.
4. Revenue and Cost Management
a. Monitor sales performance, develop strategies to optimize revenue, and achieve outlet targets.
b. Manage inventory, control costs (food, beverage, labor, and supplies), and minimize wastage.
c. Collaborate with the F&B Manager to develop and execute promotions to drive sales.
5. Compliance and Standards
a. Ensure compliance with health, safety, and sanitation regulations across both outlets.
b. Adhere to company policies and procedures, maintaining consistency in operational standards.
c. Implement sustainability initiatives where applicable, aligned with Mandarin Bay’s values.
6. Event Coordination
a. Plan and manage outlet-specific events, promotions, and themed nights in collaboration with the F&B Manager and Marketing Team.
b. Oversee banquet services when events are held within the outlets, ensuring alignment with guest expectations.
7. Reporting and Analysis
a. Prepare and submit accurate daily, weekly, and monthly reports on outlet performance, including revenue, costs, and guest feedback.
b. Analyze sales trends and operational challenges, providing insights and recommendations to the F&B Director and F&B Manager.
Key Qualifications
- Education: Bachelor’s degree in Hospitality Management, Business Administration, or a related field is preferred.
- Experience: Minimum 3-5 years of experience in a managerial role within a restaurant, resort, or hotel F&B setting. Experience in Italian and buffet-style operations is a plus.

- Strong leadership and team management skills.

- Financial acumen with experience managing budgets, P&L, and cost controls.
- Proficiency in F&B systems (POS, inventory management, etc.).
